Blast Chillers and Freezers

Blast chillers quickly reduce the core temperature of the products whether they are cooked or fresh, conserving their fresh texture hygiene and quality, whilst reducing the risk of bacteria generating.

The traditional method of storing cooked food has always been to leave it to cool naturally until it reaches a suitable temperature to store in the refrigerator.

During the period when the core temperature falls from 149° F and 50° F, the food will lose a lot of its natural characteristics, such as moisture, consistency, aroma and color, furthermore, this is when bacteria begin to develop.

Infrico Blast Chillers are designed to reduce the time period for this critical change in temperature.
Standard features:

  • Exterior: AISI 304 stainless steel, following HACCP regulations. (AB20 1P and ABT20 1C are compatible with any American pastry rack on wheels)
  • Interior: AISI 304 stainless steel, sealed interior floors and rounded cabinet corners, internal drain plug for high water pressure cleaning (on ABT 3,5,710  1L, ABT14 1L), includes a heated conical probe which is easy to use and remove.
  • Insulation: Entire cabinet structure is foamed-in place using a high density polyurethane insulation.
  • Doors: Self closing doors with stay open feature, stainless steel heavy-duty hinges(on ABT 3,5,710  1L, ABT14 1L) , triple chamber snap in door seals for easy removal and cleaning, doors are field reversible, heated door frame to avoid accumulation of ice.
  • Refrigeration: Control panel with an easy to read screen and menu, USB connection, manual defrost, Evaporator coil coated with anti-corrosion material, Forced air refrigeration system.
  • Blast Chilling: +194°F to +37°F in less than 90 minutes
  • Blast freezing: +194°F to 0°F in less than 4 hours
